Havakai Frost Tea
This tea is grown on the mountain of Nilgiris in southern India. Although this
area is in the tropics, the mountain’s elevation makes for cold nights. This happens most Januarys. Thus, the name: Frost Tea. So, the tea plant grows very slowly, resulting in a concentrated flavor. This tea is highly withered (allowed to dry in the beginning), lightly oxidized (stays green), and makes for a very bright, brisk cup. It is similar to a First Flush Darjeeling. Since it is really a winter production, it is the first tea of the new year (2024).
